Thanks to its favorable climatic conditions and good soil, a wide variety of grapes can be grown in Turkey. In addition to great production potential, the best quality grapes in the world are supplied from her natural resources. Turkey ranks the sixth in world grape production. Ancient grape figures which is found in different locations of Anatolia points out to the fact that growing grapes has been the part of the culture for centuries, has been a part of social life from the ancient times.
Sultanas,  a special type of Turkish grape family, are dried seedless grapes of Vitis Vinifera variety. These large, yellow-green grapes, dried, are particularly flavorful and soft. Sultana raisins are mainly used in baking and in confectionery production as well as fresh consumption. Both bleached and unbleached grapes are used for the production of Turkish sultana raisins. Thompson raisins are not treated with this solution but are dried naturally, and thus require more drying time than sultanas. Because of this, Thompsons are a darker colour than Sultanas.

Production:
Aegean Regions bleached and unbleached grapes are used for the production of sultana raisins. The fresh Sultana variety seedless grapes are dipped in an alkaline olive oil emulsion and sun dried.

Sun dried Sultanas stored under satisfactory conditions before processing. The fruit will be sized, screened, washed in potable water, aspirated and static picked to remove defects and foreign matter. Sun dried raisins are graded and stored in warehouses under controlled conditions.
According to the raisin color, Turkish Sultanas are classified into five categories

Thomson: dark as black (type 7)
Type 8: dark
Type 9: brownish
Type *0: light brown
Type *1: light brown to golden
