GMS-90 inFOOD:

1.    Bread Improver

The application in the goods of bread.

D-95 Distilled Glycerin monostearate is the major improver and emulsifier in high-quality bread Producing.Mixing withother improvers, GMS-90 can promote the bread fast fermenting and increase the volume of bread, improving framework of dough and prolonging the shelf life of bread.

 

        2.    Cake Foaming agent  

 

The application in pastry.

D-95 Distilled Glycerin Monostearate is used as foaming agent in cake producing after mixing with other emulsifiers such as sucrose ester,propylene glycol ester etc.Itcan foam the complex with the protein and starch to promote protein foaming and improve famework of dough, then increase the volume of pasty.

 

        3. Flour products Improver  

 

The application in flour products

D-95 distilled glycerin monostearate is able to improve the famework of dough to improve plasticity and malleability of noodles to keep good appearance and taste of noodles. It can help instant noodles to be instant to eat. Also it can improve pasta with good plasticity and malleability to improve noodles taste.

 

        3.    Biscuits improver  

 

The application in biscuits.

D-95 Distilled Glycerin Monostearate can help the fat and oil distribute evenly throughout the biscuits as state of emulsification. It can improve the framework of biscuits to avoid fat and oil effusion and makes biscuits more crispy. Meanwhile it can help the biscuits are easy to demould and keep fine appearance during the food processing.  Dosage: 5% of flour quantity.

 

        5. Cream candy and Chocolates plasticizer  

 

The application in cream candy and chocolates

D-95Distilled Glycerin Monostearateis used as emulsifier and plasticizer in cream candy and chocolates. Added with 0.5% D-95 GMS, it ensure the oil and fat in crean candies will not be separated, and improve the candys moisture resistance, shape keeping and mouth feel. 

 0.2-0.5% D-95 Distilled Glycerin Monostearate are added to prevent sugar&fat crystallizing and fat & oil separation, also result in good shape and texture.

 D-95 Distilled Glycerin Monostearate is used as fine plasticizer for gum confection to prevent polyvinyl acetate (PVA) and ester gum separation. And result in soft and chewing texture of product. Accounting for 10% of matrix, it acts as the aerating agent inaerated candies.

 

        6. Ice cream Stabilizer
