Gum Arabic is the dried , gummy exuded from the stem and branch of Acacia Senegal (Hashab) or Acacia Seyal (Talha) trees. 
Gum Arabic is the superior emulsion former that has no substitute among synthetic. 

It provides an excellent shelf life stabilized to oil-in water emulsion and does not mask flavors with a firm texture or off flavor on the tongue. 

Gum Arabic is colorless, tasteless, and odorless.
Gum Arabic is certainly the most ancient and the most well-known of all gum types. 
Chemically: Gum Arabic is complex mixture of polysaccharide and glycoprotein.
