Ostradamus SA is a company that produces oysters in Portugal:  triploid C. gigas, as well as European flat oyster O. edulis.
 
We produce high quality oysters, with meat content up to *0%.
 
Our product is quite different from the mainstream as they are grown inside a *0 hectare earthen pond; our own private ocean. Besides having a very site specific taste and high levels of glycogen for that sweet aftertaste, our oysters have a delicate shell.
 
The delicate shell is due to the fact that they are immersed *5% of the time, only coming up for air in the final stages in order to strengthen the adductor muscle. This means that, on average, our oysters are *0g lighter than a tide reared equivalent oyster. They are also easier to open and cost less to transport.
 
Our first batch should be ready by the end of June, approximately 8 tones, and then *5t per month until November. The flat oysters should be ready in December.
