PILI OIL has *6.7% oleic glycerides, *3.5% linoleic glycerides and
*9.3% saturated fatty acids. PILI oil produced has very low free
fatty acid (FFA) content of 0.*6% and moisture content of only
0.*4% which favors longer shelf life of the product.
Meanwhile, the results of the chemical and nutritional analysis of
pili pulp oil compared with olive oil revealed that it has more
beta carotene, a known vitamin A source, and caroteneoids,
phytosterols and tocopherols (vitamin E).
These substances are known for its powerful antioxidants and
protect cells from oxidation and neutralize unstable free radicals.
It is also a good source of protein, iodine, minerals and
calcium.
