Cassava starch is mainly collected in the tuber cells of cassava
roots. To extract it, cassava tubers are peeled, washed and grated
first. The grated product is then crushed again, mixed with water
and squeezed, so that the starch grains come out and are carried
away by the water. After being filtered to separate the remnants of
the dregs, the water mixed with the cassava starch is then allowed
to stand so that the starch settles. The water is then removed and
the starch deposits are dried in the sun to dry into flour.
Tapioca can be made manually in small household scale industries,
or by mechanical processes in medium and large industries.
Tapioca can also be made from cassava. However, the process
requires several additional processes, including a bleaching
process that can be carried out by sulfitation, in order to obtain
tapioca which is white in color and has a good taste.
