It is the water insoluble complex protein fraction.It is a cream coloured,free-flowing,food grade powder.When rehydrated it ragains its visco-elasticity.Vital Wheat Gluten forms a visco-elastic dough with strong film forming capability when fully hydrated. It rapidly absorbs **0% of its own weight of water.
