The yacon is a plant that grows in the center and south of américa and has the property of increasing the production of insulin of the pancreas, for what the levels of sugar decrease in the blood, allowing that the caloric expense should be obtained of other sources, like proteins and fats, hereby also reduce the levels of cholesterol and triglicéridos of the blood.
The properties of the yacon makes it a perfect food for the diabetics and for persons in diets. It contains, in a major percentage, water and carbohydrates. They reduce the risk of suffering arteriosclerosis and osteoporosis, because it improve the availability of the calcium.
