White yam also known as (dioscorea rotundata poir) is a major source of carbohydrate for a vast majority in the West African region. While some people use this white yam for pounded yam through pounding with a pestle and mortar with intermittent addition of water,  others go through different procedure by simply turning it into pound yam which is the powder form after flaking, blanching,  drying and milling.
