Introduction

Termite mushrooms, known scientifically as Termitomyces, are among the most sought-after wild edible mushrooms in Asia and Africa. In Vietnam, they are locally called nấm mối, which literally translates to "termite mushrooms" due to their natural relationship with termite colonies. These mushrooms grow symbiotically with subterranean termites, emerging seasonally after the first rains.

Termitomyces is a unique genus of mushrooms that grows in close association with certain species of termites. The termites cultivate a special underground fungus garden made from chewed-up plant material.
