●性状：呈无色至白色玻璃状的块或片，或为白色纤维状结晶或粉末，无臭、吸湿性强；在水中缓慢溶解，溶解度随聚合度而异，一般为0.**4%，水溶液呈碱性，溶于钠盐溶液，在稀的无机酸中可迅速溶解，不溶于乙醇；是高度聚合的直链型聚磷酸盐，可有少量呈环状结构的三偏磷酸钾和环状结构的四偏磷酸钾等存在；随着聚合度的增大，逐渐成为透明的玻璃状，吸湿性也随之增大。

●用途：在食品工业中用作水分保持剂、膨松剂、酸度调节剂、稳定剂、凝固剂、抗结剂、属食品质构改良剂、脂肪乳化、金属离子螯合剂、蛋白沉淀、水产调味组织改进剂、水的软化剂；用于鱼糜制品、冰淇淋、各种肉丸、火腿肠、香肠等食品工业的加工；鱼糜制品用量0.1%，冰淇淋，0.*3%～0.1%。
