AU-PEA**0 Starch Conversion Enzyme Papermaking is the largest non-food application for starches worldwide, consuming millions of metric tons yearly. A typical sheet of copy paper may contain either chemically modified or unmodified starch content as high as 8%. The word "starch" is derived from Middle English 'sterchen', meaning to stiffen. Starch or Amylum, from the Greek "amulon" meaning "not ground at a mill" is a carbohydrate consisting of a large number of glucose units joined together by glycosidic bonds. Pure starch is a white, tasteless and odorless powder that is insoluble in cold water or alcohol. It consists of two types of molecules: the linear and helical amylose and the branched amylopectin. Depending on the plant, starch generally contains about *0 to *5% amylose and *5 to *0% amylopectin. Most surface sizing agents in paper making today are usually oxidized starch. The main disadvantage of traditional method of modifying oxidized-starch are high cost, difficultiy in controlling oxidation and environment pollution among others.
