Complex Enzymes for Beer (SBH***1) is made from excellent strain through deep liquid fermentation and extraction technique. It is a compound in yellowish powder, designed specially for the high-concentration saccharification process of beer industry. It contains high active β-glucanase, pentosanase, neutral protease and amylase. Characteristics Action mechanism: During the high-concentration saccharification process in beer industry, increased concentration of mash leads to the increase in dissolved acid material, decreased pH and enlarged interface between enzyme molecule and substrate can enhance the decomposition of protein. Further more, enzyme activity can be easily preserved due to the protection of colloid in high-concentrated mash. However, simultaneously, increased concentration of mash leads to increased content of β-glucose and pentosan, which makes malt wort more viscous, the endogenic enzymes of malt cannot decompose it effectively. This will effect malt wort’s filtration performance and product’s stability. Therefore, the molecule of β-glucose and pentosan contained in malt wort during high-concentration saccharification must be decomposed perfectly. SBH***1 contains β-glucanase, pentosanase and cellulase, which can decompose viscousβ-glucose and pentosan, so as to decrease the viscosity of malt wort effectively and enhance its filtration performance. At the same time, the assistant decomposition to starch and protein by protease and amylase can increase the saccharification efficiency further and decrease sugar residue in washtrough.
