Maintaining texture while allowing the reduction in Solids Non Fat A)With less solid non-fat content, viscosity levels are higher in yogurt treated B)With Biobond TG-YG than in an untreated control. 3. Reduces or eliminate stabilizer systems A)Because viscosity is increased, it may be possible to reduce or even eliminate some stabilizer systems in certain yogurt formulations by using Biobond TG-YG. B)Ingredient label may be simplified. 4. Reduces Syneresis and gives a smooth surface A)Biobond TG-YG can reduce serum separation in yogurt because it improves the water holding capacity of the gel. 5.
