Black Barley Malt
Extract
By intensely roasting malt using very high heat we
produce Black Malt. Black Malt is pure malted barley frequently
used to adjust the color of beers ranging from very light beers
(light American lagers) that benefit from a hint of color to the
darkest
porters and stouts.
Likewise, foods and beverages can benefit from color delivered by
Black Malt. When ground into flour, Black Malt Flour successfully
color adjusts baked goods like crackers, cookies, dark breads and
baked snacks. In order to deliver this natural source of color in a
liquid form, we further and minimally process Black Malt into Black
Malt Extract. Produced as both a thick liquid and dried into
free-flowing powder, Black Malt Extract is dilutable and is used to
naturally adjust color in a wide variety of foods and beverages.
Because Black Malt Extract is **0% pure malted barley, it delivers
natural color to help manufacturers' attain claims like "no
artificial colors". When used in small quantities, Black Malt
Extract adds no flavor to finished products. Marketed as Liquid
Black Malt Extract and Dry Black Malt Extract.
Sparkling Amber Barley
Malt Extract
Sparkling Amber Malt Extract is a proprietary specialty
malt extract produced from a blend of our own specialty malts.
Developed in the ***0s as a brewing grade malt extract for the
production of red and amber craft beers, its functionality as a
natural dough improver plus its sweet caramel flavor soon found
favor within the baking industry for white bread, frozen dough,
pizza crust, pretzels and crackers. Its appealing flavor and
functionality also improves confectionery, icings and glazes. The
natural sweetness and warm color of Sparkling Amber also make it
well suited for cereal and granola as well as dry mixes including
pancakes, waffles, brownies, and cakes. In addition to processing
and flavor benefits, Sparkling Amber also helps achieve label
claims.
