Hot Break System
Function:
Inactivation of the pectolitic enzymes in tomato
by heating tomato at *5°C in hot break system. Working at hot break
will achieve following performances:
- Increases
the yield of the juice extraction process compares to the
traditional systems.
- Limitation
and/or partial elimination of the synaeresis phenomena of the
concentrated product.
- Increased
consistency of the final concentrated product due to the total
inactivation of the pectin agents.
The system assures the immediate inactivation of
the pectolitic enzymes of the product, coming from the washing and
sorting tables, by “injecting” the incoming raw material into a
recycling hot product flow. Such recycling mass of product at about
*5°C is kept circulating through a special large tube-in-tube wide
surface heat exchanger and the holding tank by means of a
centrifugal pump having a capacity of more than *0 times higher
than the incoming product. After the necessary holding time in the
above described circuit the product that has been enzymatically
inactivated is extracted and transferred to the juice extraction
units.

Description:
Cylindrical body with vertical axis and
toro-spherical top end. The bottom end is conical with a feeding
tube to the centrifugal pump at the end. It includes inspection
manhole and washing spray balls.
Function:
It guarantees the product (tomato) enough time
for the complete inactivation of the pectolitic enzymes. The
inactivation temperature maintained inside is instantly reached by
the cold tomato inlet by means of fine mixing of it in large hot
fluid current moved by circulation pump.

Description:

Function:
Product re-circulation in order to raise

Function:
It extracts the product from the hot break and
