It is a sodium salt of carboxymethyl cellulose ethers, white or milky white fibrous powder or particles, almost odorless and tasteless, with moisture absorption, easy to disperse in water into transparent colloidal liquid, insoluble in organic solvent such as ethanol. The PH value of 1% aqueous solution is 6.5- 8.5. The mucilage viscosity decreased significantly when the PH >*0 or <5, , while PH is 7, it has the best performance. It is thermal stable. The viscosity increases rapidly below *0℃, changes slow at *5 â„ƒ, and  degenerates and decreases obviously above *0℃ after longtime heating. 
 
Sodium carboxymethyl cellulose CMC in food applications is not only a good emulsification stabilizer and thickener but also with excellent freeze and melt stability which can improve the products flavor and extend the storage time. The dosage in soy milk, ice cream, jelly, beverage, canned products is about 1%*1.5%. CMC can also be a stable emulsion dispersion with vinegar, soy sauce, vegetable oil, fruit juice, gravy, vegetable juice and etc, its emulsion performance is very good, especially for animal and plant oil, protein and aqueous, can make them stable homogeneous emulsion.
