Amaranth was selected by NASA to feed astronauts for its high nutritional value, comprehensive utilization, its short growing season and its ability to grow in adverse conditions.
Amaranth grain has about *3 % protein, slightly higher percentage than traditional cereals. Its importance lies in the quality of its excellent balance of amino acids.
 
It has a significant content of lysine, an essential amino acid in the human diet. It has high-calories, carbohydrates, fiber and minerals. Amaranth is comparable in nutritional value to milk, making it perfect for children, pregnant and breastfeeding women. In addition, the amaranth grain is gluten free, thus it is a food suitable for celiac.
