Soya lecithin is a natural derivative from the oil extraction of soybeans. The process of making involves the addition of water and subsequent drying, performed under standardized procedures.   
It consists mainly of phospholipids, which by their physical and chemical characteristics make of the lecithin a product with multiple functions, like emulsifier, humidifier and liberator agent among others.
