Turkey is the world's leading figs producer. Aegean province is famous for dried figs.

 

Figs are an important source of essential amino acids and vitamins and dried figs offer significant amounts of calcium. Dried figs contain high levels of polyphenols (antioxidant properties). 

Figs are not harvested until they ripen fully and begin to dry on the branches of the trees. This occurs between mid-August and mid-September. The figs are picked up and laid under the hot Aegean sun to dry. After the figs are dried; they are washed, processed and packed in the desired form. No additives or preservatives are used in Turkish figs.  

The most common forms of whole figs exported are Natural, Lerida, Protoben, Pulled, Garland (disc shaped).
