We collect our fresh eggs during the laying season, which is normally from November through April. Each of our hens lays 1 egg every three days, on average. The taste difference between rhea eggs and chicken eggs is minimal. Chicken eggs contain *7% saturated (bad) and *3% unsaturated (good) fats, while emu eggs contain *1% saturated and *8% unsaturated fats. Both contain all 8 of the essential amino acids needed in human nutrition. Chicken eggs contain about *5% white, *5% yolk.
