Fenugreek gum is a nearly colourless or slightly cream-coloured powder having a bland taste. Highly purified and protein-free fenugreek polysaccharide is a good emulsifier. Fenugreek gum is a soluble dietary fiber and is a new addition to the list of edible galactomannan gums. Since the whole seed of fenugreek is traditionally considered to be edible; its endosperm mucilage did not need fresh clearance as an edible gum from government departments. Commercially available fenugreek galactomannon is easily dispersed in water and hydrates at room temperature to develop high viscosity. However, it does not show synergic viscosity increase and gelling like guar gum.

USES

·        Due to emulsifying property of fenugreek gum coupled with its moisture holding capacity allow it to use in cosmetic products.

·        Being non-metabolized by the enzymes in the human system, galactomannans act as dietary food fibers and promote beneficial prebiotic colon bacteria.

·        Ingesting a food compounded with fenugreek gum regulate blood glucose and insulin response in normal and diabetic persons.
