Mountain ash pectins are capable of gelation in the presence of sugars and organic acids. Pectins prevent excess fermentation of carbohydrates, which reduces gas production in the intestines. The jelly-forming properties of pectins promote the binding of endogenous and exogenous toxins and the elimination of excess carbohydrates.
