Polylysine (ε-poly-L-lysine) is a small polypeptide of the essential amino acid L-lysine that is produced by bacterial fermentation. It has an antimicrobial effect against yeast, fungi and gram+/- bacteria. Since the late ***0s, polylysine has been approved by the Japan and Korea as a preservative in food. In January ***4, Polylysine became generally recognized as safe (GRAS) certified in the United States. In ***8, EFSA is already considering it as food additive in processing.
